MOLE COLORADO
INGREDIENTS
- A cut chicken in pieces, stew with garlic, onion and salt (or a kg. of meat of pig cooked with the same ingredients).
- Half a kg. of Chile wide red.
- 150 gr. of Chile guajillo.
- 150 gr. of Chile chilhuactle red.
- A kg. of tomato.
- An onion.
- A garlic bulb.
- Three soup spoon of toasted sesame
- Ten peppers.
- Five nails of smell.
- Two teaspoons of oregano.
- 100 gr. of almonds.
- 100 gr. of nut.
- 100 gr. of peanut.
- A fried yolk bread slice.
- Two boards of chocolate.
- Sugar.
- Oil or fat and salt.
WAY TO BE DONE
The Chiles are heated (already without seeds) and they begin to soak in hot water.
Immediately the tomatoes are roasted and they are ground with the onion and the garlic; then themselves fry, of preference with lard. And when the tomato is put "curly" they are added (very well shattered) the Chile, the spices, the sesame tostado, the fried bread, the nuts and the fried peanuts and the almonds peeled. After frying this mixture is added the broth of the meat, taking care of that the mass remain not neither very thick neither watered down. Finally the salt is put and the boards of chocolate they are added and a little bit one of sugar.
A little before being served the meat is put in the mass.
